It’s Valentine’s Day this week, which means your consumption of all things chocolate should reach it’s yearly peak. Are you a milk, dark, or white chocolate person? I go with dark chocolate every time – the darker, the more bitter, the better!
I think dark chocolate is most enjoyed when dripped, dipped, or wrapped around a big juicy strawberry. The slightly bitter taste of dark chocolate perfectly compliments the cool, sweet juice of a fresh strawberry. Unfortunately, February isn’t exactly strawberry season around here. What we do have at our house, though, are pounds and pounds of frozen strawberries just waiting to be blended up in a smoothie. Also, I’m positive I am not the only person out there looking for an excuse to eat chocolate for breakfast.
Chocolate Covered Strawberry Smoothie (vegan, dairy free, Maker’s Diet Approved)
*Warning – this requires you to soak cashews overnight*
1/4 cup cashews
1/2 cup filtered water
1/2 cup unsweetened vanilla almond milk
1 1/2 teaspoon cacao powder
1 teaspoon sweet cacao nibs
1/2 cup frozen strawberries
1. Soak the cashews in 1/2 cup filtered water overnight.
2. Place soaked cashews and any remaining water in a blender along with all other ingredients. Blend until smooth.
This smoothie can boast filling you with protein, healthy fats, antioxidants, calcium, and tons more vitamins, and it has chocolate in it! It’s a wonderful option for a naturally sweet and healthy breakfast or snack.
